How to mince garlic & herbs

Mincing is the finest chop — used for garlic, herbs, and aromatics so their flavor melts into a dish instead of arriving in big bites.

Why it matters

Finely minced aromatics season a whole pan with no added salt or fat — a flavor shortcut that keeps meals healthy.

Step by step

  1. 01

Smash a garlic clove with the flat of the knife to loosen the skin, then peel.

  2. 02

Slice thinly, then cut across into tiny pieces.

  3. 03

Rock the knife back and forth over the pile, keeping the tip on the board, until very fine.

  4. 04

Gather and chop again if you want it finer.

You'll know it's ready when

  • Pieces are tiny and even — almost a paste for garlic.

Common mistakes to avoid

  • Leaving pieces too big, so flavor is uneven and sharp.
