Ingredients

  • 4 turkey meatballs
  • 1 large handful salad greens
  • 1 small handful grape tomatoes, halved
  • 2 cloves garlic, sliced
  • 2 cups low-sodium broth

From your pantry: olive-oil.

Method

    the garlic in a little olive oil until fragrant.

    Add the broth and meatballs; 10-12 minutes until hot through.

    Add the halved tomatoes and simmer 2 minutes more.

    Stir in the greens off the heat until just wilted.

  • Stir the greens in at the very end so they stay bright and just wilt.
