Dietitian’s tip

This is a light, brothy bowl - the meatballs carry the protein and the greens add fiber with very little carb.

Ingredients

  • 4 turkey meatballs
  • 1 large handful salad greens
  • 1 small handful grape tomatoes, halved
  • 2 cloves garlic, sliced
  • 2 cups low-sodium broth

From your pantry: olive-oil.

Method

  1. 01

the garlic in a little olive oil until fragrant.

  2. 02

Add the broth and meatballs; 10-12 minutes until hot through.

  3. 03

Add the halved tomatoes and simmer 2 minutes more.

  4. 04

Stir in the greens off the heat until just wilted.

Dietitian’s notes

  • Use low-sodium broth and let the meatballs simmer in it so they flavor the whole pot.
  • Stir the greens in at the very end so they stay bright and just wilt.
