Ingredients

  • 2 eggs
  • 1/2 bell pepper, diced
  • 1/4 cup grape tomatoes, halved
  • small handful salad greens
  • 1 tsp butter
  • pinch lemon pepper seasoning

Method

  1. 01

    Melt butter in a nonstick pan over medium heat.

    Add bell pepper and cook 2 min until softening.

  3. 03

    Add tomatoes and greens; cook 1 min.

  4. 04

    Beat eggs, pour in, and gently stir 2-3 min until just set.
