Ingredients

  • 1/2 large sweet potato, peeled and diced small
  • 1 tsp butter
  • 1/2 bell pepper, diced
  • 2 eggs
  • pinch lemon pepper seasoning

Method

  1. 01

    Microwave sweet potato 2-3 min to soften (or 5 min, drain).

    Melt butter in a pan over medium-high; add sweet potato and pepper. Cook 5-6 min until edges crisp.

    Push to one side, crack in eggs, and cook 2-3 min to your liking.
